Pasta A La Mommy!

I am currently 31 weeks pregnant with twins and as you can imagine when it comes time to make dinner there isn't a lot of energy to put forth. So when dinner time arrived the other night I threw together a makeshift baked pasta that turned out heavenly and took all of ten minutes to put together. My kind of meal! Did I mention that it was not only delicious, but nutritious?

Ingredients:

1 family size package Butoni cheese tortellini
1 jar Trader Joe's alfredo sauce
1 can unsalted, organic diced tomatoes, drained.
1/2 package Quorn chik'n tenders
1/2 bag frozen organic chopped spinach
Smoked paprika
Peppercorn grinder

Okay. I took the nice deep bowl that belongs to my Kitchen Aid stand mixer and I placed the pasta and Quorn tenders in it. Then I poured the tomatoes over that and the Alfredo sauce over that. Before I stirred I put a heavy dusting of smoked paprika and about half a dozen or so cranks of fresh ground pepper. After stirring until all the pasta and Quorn were coated I added the spinach as an afterthought and mixed it all together.

I sprayed a 9x13 Pyrex baking dish with olive oil and poured the entire concoction into the pan. After sprinkling the top with some grated Parmesan I covered the whole thing with foil and put in in the oven for about 40 minutes at 325 degrees.

It came out so flavorful and delicious, we reheated the leftovers for dinner the next night. Now that's my idea of a quick and easy dinner and I even got two meals out of it!

Can't wait to make this again, maybe next time I'll add some broccoli. Who knows.

With the creamy tomato base of the sauce and tomatoes, and the protein in the cheese tortellini and Quorn, this is a healthy meal before you ever add the veggies. They are just a great bonus :-)

Hmm, maybe asparagus next time instead...
